Les enzymes digestives sont des molécules capables de catalyser (accélérer) une réaction chimique. La plupart du temps, les enzymes sont des protéines. Ce sont sont des molécules qui ont une structure et un rôle bien définies dans l’organisme.

Comment fonctionnent-elles ?

Pour fonctionner, tout organisme a besoin d’énergie. Et c’est notamment grâce aux enzymes qui nous pouvons fabriquer cette énergie ; par conséquent, les processus métaboliques de notre organisme ne peuvent pas s’exécuter sans enzymes.

Les enzymes peuvent agir seules ou à plusieurs. Par ailleurs, elles sont constituées de chaînes d’acides aminés, c’est justement cette composition qui détermine sa structure, définissant ainsi son rôle dans l’organisme.

Seule une petite partie est essentielle sur l’enzyme : le site actif. C’est l’endroit où l’enzyme va se lier à son substrat et ainsi démarrer la réaction dont elle a le secret. Pour faire simple, l’enzyme est la clé et le substrat la serrure. Ce qui signifie que chaque enzyme possède une structure adaptée à son substrat et à sa fonction. C’est pourquoi il existe un très grand nombre d’enzymes digestives jouant un rôle bien spécifique et primordial dans les processus physiologiques (métabolisme, signaux cellulaires…).

Et les enzymes digestives ?

Les enzymes n’ont pas qu’un rôle de catalyseur ou d’accélérateur de réaction. Il existe aussi des enzymes qui découpent ou décomposent les substrats : c’est le cas des enzymes digestives, qui servent à digérer les aliments ingérés pendant le repas. Produites dans le système digestif par les différents organes et glandes qui le composent, ces enzymes digestives cassent les nutriments en petites molécules pour que les cellules du corps et ses tissus puissent en bénéficier. Par exemple, l’enzyme saccharase va décomposer le substrat saccharose en 2 sucres simples : le glucose et le fructose, afin que les différents organes puissent les utiliser.
