Très populaire en Asie, le bao est une petite brioche très facile à réaliser. Il se décline sous différentes formes : sucré, salé, version sandwich ou pain farci, les possibilités sont nombreuses. Le bao c’est quoi ?
Le bao bun, aussi appelé baozi, est un petit pain brioché asiatique hyper léger et aérien. Sa particularité réside notamment dans la cuisson. De couleur blanche, la pâte de bao est relativement épaisse et est faite à partir de farine de blé. Cette recette millénaire est consommée et revisitée dans de nombreux pays, notamment en Asie de l’Est. On retrouve des préparations similaires au Vietnam sous le nom de bánh bao, ou encore les gua bao à Taïwan.
Un peu d’histoire…
Le bao trouve ses origines en Chine, dans une légende chinoise du temps des Trois Royaumes. La légende raconte qu’un chef des armées, Zhuge Liang, était contraint de livrer 50 têtes humaines de ses soldats en échange d’une traversée de rivière en sécurité. À la place, 50 brioches en forme de tête humaine, garnies de porc et/ou de bœuf, ont été préparées et ils les firent flotter sur la rivière. Ainsi est née la technique de préparation de la pâte, appelée « mantou » en chinois.

Recettes de bao
Il existe différents types de bao avec différentes garnitures : poulet, bœuf, poisson, carottes, concombre, coriandre, etc. Ils sont souvent accompagnés de condiments. Par ailleurs, les bao peuvent se façonner en boule, ou bien sous forme de sandwich.
